About the thesis

Biomarkers of meat intake may help clarify the controversial relationship between consumption of red meat and its effect on human health. This PhD project pays a close look at the development of biomarkers for intake of red meat by applying last-generation untargeted metabolomics techniques.

By investigating biological data collected in three human studies (2 cross-over controlled meal studies and a cross-sectional analysis of a lifestyle intervention study – the PREVIEW study), biomarkers of red meat intake are discovered and extensively validated according to published validation criteria.

The performance of single and combined biomarkers to predict meat intake is also thoroughly explored. The present thesis provides an overall evaluation of the status of biomarkers of red meat intake. Come and see!
